About this wine

Vineyard and terroir

Trebbiano and Malvasia are grown in estate vineyards at 127 metres above sea level. The vines are trained to cordon spur, and the grapes are harvested by hand.

Vinification

After harvest, the grapes are dried on straw mats for at least 90 days to concentrate their sugars. Following pressing, fermentation takes place in 100-litre caratelli on the madre, a culture of yeasts and bacteria preserved from one year to the next and central to the wine's character.

Ageing

Fermentation and slow ageing continue in the caratelli on the madre for 8–9 years.

Technical data

The 2009 vintage has 16.5% alcohol.

Tasting profile

Amber in colour, with an intense bouquet of dried apricot, bitter almond and honey. The palate sits between overt sweetness and dryness, supported by good acidity.

The balance of sweetness and acidity makes it adaptable to a range of foods.
