About this wine
Vineyard and terroir
The grapes are grown in the hills of Florence around Fiesole, Tuscany, on lean, galestro-rich, calcareous soils. The vines are trained using low-spurred cordon and Guyot systems and are farmed organically. The wine is ICEA-certified in accordance with EU organic-production regulations CE 834/07 and CE 889/08.
Grapes
Trebbiano Toscano and Verdicchio.
Vinification
The grapes are harvested by hand in mid-September and carefully selected while maintaining the integrity of the berries to limit oxidation and unwanted fermentation. Immediate gentle pressing preserves the grapes’ fresh primary aromas. Fermentation proceeds in stainless-steel tanks at controlled temperature.
Technical data
I.G.T. Bianco di Toscana. Organic white wine from Fiesole in the hills of Florence.
Tasting profile
Intense straw yellow. The nose is pronounced, mineral and citrus-led, with distinct grapefruit-peel aromas and subtle spice. The palate is dry, savoury and harmonious, with notable persistence and a bitter-grapefruit finish that echoes the aromatic profile. Its intense character continues to develop in the glass.
Serving and pairing
Serve at 12–14 °C in medium-sized glasses. Pair with raw or grilled fish, including preparations requiring a wine with some substance, as well as white meat, liver, mushrooms and truffles. Under suitable storage conditions, it can evolve for up to four years from the harvest.
Label / history
During the 1980s, Mauro Galardi sought an Italian variety that could complement Trebbiano Toscano and bring greater intensity and persistence to a white wine suited to Tuscan cuisine. He planted Verdicchio at Poggiopiano in 1987 and petitioned the Tuscany regional authority to admit the variety for Bianco di Toscana I.G.T., drawing on his research and studies conducted by the University of Florence.
