About this wine

Vineyard and terroir

The grapes come from the Florentine hills around Fiesole, Tuscany. The lean soils contain galestro and limestone. The organically farmed vines are trained as low-spurred cordons and Guyot. Merlot and Cabernet Sauvignon are selected in the vineyard and harvested by hand between late August and early October.

Vinification

Fermentation takes place in temperature-controlled stainless-steel tanks with pump-overs and délestage. Grape selection and extraction are managed to emphasize intense fruit and supple tannins.

Ageing

The wine spends 9–12 months in barrels and an 800-litre terracotta amphora made in Impruneta, followed by 12–18 months in bottle. Introduced to the cellar in 2012, the porous amphora permits micro-oxygenation while limiting the flavour and tannic influence associated with wood.

Tasting profile

Intense ruby red, developing pronounced garnet reflections with age. The broad, well-defined aroma retains clear primary-fruit notes. Ripe red fruit and substantial structure shape the palate, with the components combining into a balanced aromatic and flavour profile.

Serving and pairing

Serve at 18°C after decanting, preferably in a broad crystal glass. Pair with red meat, game or stewed meat. With age, it can also be enjoyed as a contemplative wine on its own.

The listed release is 2020. Best consumed within 10 years of harvest.

Label / history

An Impruneta terracotta amphora was introduced in 2012 to give greater prominence to the grapes and soil while avoiding an overly marked wood character.
