About this wine
Vineyard and terroir
The vines grow in sandy, clay soils rich in limestone. The grapes are harvested by hand.
Grapes
The name Grignolino comes from the Piedmontese word "grignole", meaning seeds, which the variety has in abundance.
Vinification
The grapes are destemmed and then pressed. Fermentation takes place in stainless steel tanks at 26 °C for 6–8 days, followed by malolactic fermentation at 20 °C.
Ageing
The wine is aged for three months in stainless steel vats, to preserve its freshness and the grape's clean varietal character and to create a balance between acidity and softness.

Delicate, with a balance between acidity and softness and a clean varietal character.
Label / history
The name refers to jockeys. In the Asti dialect a "paggio" is a Palio jockey, the Palio being a horse race with very rough rules. The paggio was responsible for keeping a warhorse in good health between battles.
