Grapes
100% Arneis, grown organically.
Vinification
The grapes are harvested by hand and placed in perforated crates to preserve their condition through transport and processing. Approximately half is destemmed and begins spontaneous fermentation with indigenous yeasts. After several days, the fermenting portion is drained and its must combined with must obtained by gently pressing the whole grapes. Fermentation then continues slowly at 18–19 °C. Malolactic fermentation may follow in vintages whose conditions permit it.
Ageing
The wine undergoes bâtonnage on fine lees for 7–8 months. Designed as a structured and complex expression of Arneis, it is released during the second half of the year following harvest.
Tasting profile
Golden in colour, with intense floral aromas opening into notes of fruit and honey. These qualities carry through to the palate, supported by good body, persistence and balance. The wine is complex and well structured, while gentle acidity contributes freshness and an especially pleasing lift.
