Vineyard and terroir

The fruit is carefully selected from the Campo Quadro vineyard in the San Cristoforo MeGA of Neive.

Grapes

100% Nebbiolo. Certified organic wine.

Vinification

Fermentation begins spontaneously through the action of indigenous yeasts. The cellar employs a distinctive method in which part of the vigorous fermentation proceeds with the cap completely submerged.

Ageing

The wine first spends a short period in new wood, followed by maturation in previously used wood and frequent blending intended to keep the influence of oak balanced. Wood ageing is adjusted to the character of the vintage and the wine, ranging from 15 to 36 months. After bottling under suitable conditions, it matures in bottle for a period equal to its time in wood before release.

Tasting profile

Intense in colour, elegant and structured. The complex, broad bouquet moves from fruit into delicate secondary and floral aromas, together with spice, chocolate and butter. Its continuing development in the glass provides an evolving tasting experience. The overall profile is highly complex and built for long ageing.
