About this wine
Vineyard and terroir
The vineyards are farmed organically, using only natural fertilisers. Crop thinning removes half of the grape clusters to concentrate the remaining fruit. In favourable, warm years, one vine yields enough fruit for one bottle; in rainy years, several vines are required.
Vinification
Fermentation takes place in stainless-steel tanks.
Ageing
The wine matures in French oak barriques, followed by further ageing in bottle.
