About this wine

Vineyard and terroir

Produced since 1985, Molino delle Balze draws on four Chardonnay plots at Castagnoli, described together as approximately 3.9 ha. Podere La Stella covers 1 ha at about 480 m, faces northeast and has soils rich in Chianti Macigno and other sandstones. Caciaie covers 1 ha at roughly 400 m, faces north and contains Alberese and calcareous clay sequences. Sodone covers 1 ha at about 380 m, faces west and is marked by Alberese and limestone. Campi covers 0.9 ha at approximately 300 m, faces east and is the coolest parcel, with Pietraforte and Alberese soils.

The varied geology, elevation and exposure contribute structure, acidity, freshness and mineral character. The upper Chianti Classico climate provides day-to-night temperature variation through the ripening period from August to the second-half-of-September harvest. The vines range from 6 to 20 years old, are spur-pruned and planted at 5,000 vines per hectare, with an average yield of 1 kg per vine.

100% Chardonnay.

Vinification

Harvest takes place in the second half of September. The fruit undergoes a 48-hour cold treatment followed by gentle pressing. Fermentation lasts about ten days, divided equally between stainless steel and first- and second-use barriques. Malolactic fermentation is likewise divided between wood and stainless steel.

Ageing

At least ten months in bottle.

Technical data

Annual production is approximately 10,000 bottles.

Tasting profile

Clear, bright straw yellow. The persistent bouquet features peach and apricot over quince and acacia honey. The palate is supple, enveloping and structured, balancing pronounced minerality and savoury character with freshness. It finishes harmonious and long.

Serving and pairing

Serve at 8–10°C. Pair with white meats, fresh or medium-aged cheeses, and fish of all kinds. It may be enjoyed young but can continue to evolve for 5–10 years.
