About this wine
Vineyard and terroir
Sangiovese comes from various cooler plots in Località Capraia, covering 45 hectares at an average elevation of 300 metres. Exposures vary. The medium-textured soils are rich in clay and galestro stone. Vine age ranges from new plantings to 35 years, with a density of 5,000 vines per hectare and an average yield of 1.2 kg per plant. Both spur pruning and cane pruning are used. The fruit is selected carefully and picked early to retain freshness and elegance.
Grapes
100% Sangiovese.
Vinification
Direct pressing supplies 50% of the must. For the other half, the cap is raised after only four hours of skin contact. The two fractions are then reunited, and alcoholic fermentation continues for 7–8 days at 15–17°C.
Ageing
The wine remains on its fermentation lees for two months before bottling.
Tasting profile
Pale antique pink in color, this is a fresh and delicate rosé. Hawthorn, rose and wisteria appear over white-fruit aromas. Light tropical nuances return on the palate alongside concentrated fruit, while freshness and minerality shape an elegant, finely drawn profile.
Serving and pairing
Serve at 10°C. Suitable as an aperitif and with medium-aged cured meats, savory pies, appetizers, pasta with vegetable- or fish-based sauces, white meats, and steamed or baked fish.
