About this wine
Vineyard and terroir
The grapes come entirely from the Poderi Ducali estates in Veneto, including Ca’ del Duca and La Duchessa. Vineyards lie at 100–250 m on deep soils composed of conglomerates of rock and sand, with abundant clay and iron.
Grapes
85% Glera; the remaining 15% comprises Pinot Grigio, Chardonnay and other complementary varieties. The grapes are organically grown.
Vinification
Carefully selected grapes are pressed to obtain the must. One portion undergoes alcoholic fermentation to become base wine, while the rest is held in the cellar at 0 °C, allowing the cuvée to be prepared beyond the harvest period. Must and wine are then blended and refermented with selected yeasts in pressurized tanks according to the Charmat method. The process lasts about one month, preserving fruit aromas and developing a fine perlage.
Technical data
Alcohol: 11%. Bottle format: 750 ml.
Tasting profile
Straw yellow, with a small, fine and persistent perlage. The bouquet combines apple, pear and elderflower with floral notes. The palate is refreshing and finishes with citrus and peach.
Serving and pairing
Serve at 7–9 °C. Suitable as an aperitif with cold dishes or fried food, and with risotto or mildly spiced dishes.

This was Ruffino’s first organic Prosecco and is produced entirely from its Poderi Ducali estates in Veneto.
