About this wine
Vineyard and terroir
The organic Baccareto vineyard covers 2 ha in Galgano, in the municipality of Mercato Saraceno, Forlì-Cesena. It lies at approximately 250 m above sea level on clay-limestone soils. Constant air currents arrive from the Adriatic and the Alps. Planting density is 4,300 vines per hectare.
Vinification
The grapes are harvested by hand in mid-September and undergo two selections: one in the vineyard and another at the winery. Whole bunches are pressed, after which the must settles at low temperature. Fermentation takes place in stainless-steel tanks for two weeks.
Ageing
The wine rests on its fine lees in stainless-steel tanks. It is lightly filtered and bottled in late February or early March.
