About this wine
Vineyard and terroir
The fruit comes from the organic “Roversano” vineyard in the commune of San Carlo, at around 400 metres above sea level. Its sandy, limestone-rich soils are streaked with tuff. Constant air movement from the Adriatic and the Alps creates favourable climatic conditions. Planting density is 3,500 vines per hectare.
Vinification
The grapes are harvested by hand in early September, selecting only fully ripe bunches. The fruit is sorted twice: first in the vineyard and again at the winery. Whole bunches are pressed, and the must settles at low temperature before fermenting in stainless-steel tanks for two weeks. The wine is neither fined nor filtered.
Ageing
Half of the wine matures in stainless-steel tanks and half in oak barrels for eight months. After bottling, it rests in the winery’s cellars for at least one year.
