About this wine
Vineyard and terroir
The fruit comes from the 1 ha organic Taibo vineyard in the municipality of Mercato Saraceno, in the province of Forlì-Cesena. The site lies at approximately 250 m above sea level and has stony soils rich in brown clay and silt. Constant air movement from the Adriatic and the Alps contributes to the favourable climate. Planting density is 6,300 vines per hectare.
Vinification
The grapes are harvested by hand in mid-September and undergo two selections: one in the vineyard and another at the winery. Fermentation takes place in closed stainless-steel tanks, followed by malolactic fermentation in steel. The wine is neither fined nor filtered, and no sulfites are used during production.
Ageing
The wine remains on its fine lees for approximately six months with minimal oxygen exposure and without racking or aeration. After bottling, it rests in the winery’s cellars for at least three further months.

Annual production is approximately 5,000 bottles.
