About this wine
Vineyard and terroir
The 2 ha organic Roversano vineyard is in the commune of San Carlo, at approximately 400 m above sea level. Its soils are sandy limestone with veins of tuff. Air currents from the Adriatic and the Alps circulate constantly through the site. Planting density is 3,500 vines per hectare.
Vinification
The grapes are harvested by hand in early September and undergo two selections: one in the vineyard and another at the winery. Whole bunches are pressed, and the must is settled at low temperature. Fermentation lasts two weeks in stainless-steel tanks. The wine is neither fined nor filtered.
Ageing
The wine ages for eight months on its fine lees in stainless-steel tanks.
