About this wine
Vineyard and terroir
The grapes come from the 1 ha organic “Galgano” vineyard in the municipality of Mercato Saraceno, in the province of Forlì-Cesena. The site lies at approximately 250 m above sea level, on clay and silt soils rich in stones, and is planted at a density of 6,300 vines per hectare. Constant air movement from the Adriatic and the Alps contributes to a particularly favourable climate.
Vinification
The grapes are harvested by hand from late September to early October and undergo two selections: one in the vineyard and another at the winery. Fermentation takes place in temperature-controlled stainless-steel tanks, followed by 20 days of maceration. The wine is neither fined nor filtered.
Ageing
Malolactic fermentation and six months of ageing take place in stainless-steel tanks. After bottling, the wine rests for at least a further three months in the winery’s cellars.
Label / history
Approximately 5,000 bottles are produced each year.
