About this wine
Vineyard and terroir
Carignano is grown in lower Sulcis in vineyards trained both as bush vines and on vertical trellises. Soils are predominantly medium-textured, combining clay, sand and limestone. Grotta Rossa belongs to the Origini range, which centres on native varieties and restrained winemaking.
Grapes
Carignano.
Vinification
The grapes are harvested by hand from early September through mid-October. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks for approximately 15 days. Maceration and frequent pump-overs encourage thorough extraction of polyphenols from the skins.
Ageing
The wine matures for several months in concrete tanks before bottling.
Tasting profile
Ruby red. The nose is intensely fruity, finishing on a liquorice note. The palate is elegant and retains good volume.
Serving and pairing
Serve at 14–16 °C. Pair with substantial first courses or main courses based on red meat, game or poultry.
