Vineyard and terroir
Chardonnay finds favourable conditions in Piedmont, in its climate, soil and vineyard exposure.
Vinification
The free-run juice, obtained after gentle crushing, undergoes a short cold maceration. Fermentation follows at 18–20 °C to enhance the grape's varietal aromas. Malolactic fermentation then takes place, and the wine rests for several months on the lees, which adds complexity and helps it age well. Before bottling it is blended with 5–15% wine from the previous vintage that has been aged in barriques.
Tasting profile
Fresh and pleasantly complex, with an inviting character. Aroma and palate show notes of yellow fruit, especially apple and banana.
Serving and pairing
Suited to fish dishes throughout the year. It can be drunk on release or kept for 3–4 years.
