Vineyard and terroir
Casal dei Ronchi is an ancient vineyard on the Possessioni Serego Alighieri estate. Its prestige and historical importance led the family to use it for Recioto production.
Grapes
Corvina, Rondinella and Molinara, including the Serego Alighieri clone of Molinara.
Vinification and ageing
The grapes rest through winter on bamboo racks in the drying loft during Appassimento. The style is a noble traditional sweet red wine from Valpolicella. Production is limited and the wine is used as a classic welcoming offering for family guests.
Technical data
Alcohol: 14% vol. Serving temperature: 15?C. Storage life: 20 years: the first five years for the sweet fruity style, then 15-18 more years for a long ageing process with spicy evolved aromas until the wine becomes similar to Port. Bottle size: 500 ml. Contains sulphites.
Tasting profile
Dark opaque red. Intense aromas of cherries preserved in spirit and walnuts. Sweet palate of super-ripe cherries, plum jam, spices and elegant tannins.
Serving and pairing
After-dinner wine for millefeuilles, country-style tarts, fruit pies, panettone and strawberries. It also pairs with mild cheeses and gorgonzola.
