About this wine

Vineyard and terroir

Vaio Armaron comes from the eponymous vineyard on the historic Serego Alighieri estate. The name is linked with the possible origin of the word Amarone.

Grapes

Corvina, Rondinella and Molinara, including the Serego Alighieri clone of Molinara.

Vinification and ageing

The estate's Amarone belongs to the Valpolicella Appassimento tradition: grapes from the classic blend are dried on bamboo racks in the fruttaio for at least 100 days before vinification. The wine's personality is shaped by ageing in cherry-wood casks; the cellar also uses oak for first maturation stages because cherry wood is porous and is used for a maximum of four months.

Alcohol: 15.5% vol. Serving temperature: 18?C. Storage life: 25-30 years. Bottle sizes: 750 ml, 1,500 ml and 3,000 ml. Contains sulphites.

Tasting profile

Opaque ruby red. Intense, elegant aromas of fruit preserved in spirit, dried plums and cocoa. Structured and balanced on the palate, with silky tannins and a long finish of ripe cherries and sweet spices.

Serving and pairing

Pairs with risotto, tasty and spicy pasta dishes, fine meats such as wagyu, buffalo beef or seared Argentine Angus, especially with mushrooms or truffles. Mature cheeses such as Parmigiano, Pecorino and Monte Veronese with walnuts and acacia honey also suit it. It can be served after dinner with dark chocolate chips.
