About this wine

Vineyard and terroir

The Sauvignon Blanc comes from Novella, the southernmost hamlet of Monforte d’Alba. The site has sandy sedimentary soils characteristic of the Barolo area, identified as sandy Marne di Sant’Agata Fossili. About 80% of the vines are 10 years old; the balance comes from old Dolcetto vines grafted over to Sauvignon Blanc in summer 2013.

100% Sauvignon Blanc.

Vinification

Harvesting is performed manually, vine by vine, with particular care to preserve each bunch intact. Full ripeness generally arrives by mid-September. After destemming, the berries undergo gentle pressing. The must then rests in stainless steel for 10 days before alcoholic fermentation.

Ageing

The wine matures for 12 months in stainless-steel tanks at 10 °C, remaining on its fine lees. A portion varying from 20% to 30%, depending on the vintage, spends about nine months in tonneaux.

Technical data

Production is limited to approximately 5,000 bottles.
