The vineyards lie on hillsides around San Paolo at an altitude of 500 m, on deep limestone soils.
Grapes
The grapes are carefully selected.
Vinification
Slow fermentation takes place in temperature-controlled stainless-steel tanks, without malolactic fermentation.
Ageing
The wine rests on its lees in stainless-steel tanks for five months.
