About this wine
Vineyard and terroir
The fruit comes from vineyards at 250–280 metres above sea level, on poor volcanic soils.
Vinification
The grapes are harvested by hand at optimal ripeness, then sorted and destemmed. Fermentation proceeds slowly at a controlled temperature in stainless-steel tanks, with periodic gentle stirring of the must, followed by malolactic fermentation.
Ageing
The wine matures for 12 months in wooden barrels, one-third of them new. It is blended three months before bottling. The recommended drinking window for the 2018 vintage is 2021–2031.
