About this wine
Vineyard and terroir
Nebbiolo is sourced from growing locations allowed by the Barolo production specifications. The vineyards have calcareous-clay soils and vertical trellising with Guyot pruning. All grapes are picked by hand in October, with a maximum yield of 8 tonnes per hectare.
Grapes
100% Nebbiolo.
Vinification
The fruit is destemmed and crushed under a controlled atmosphere. Alcoholic fermentation takes place at 28–30°C, with approximately 16–20 days of skin contact. After malolactic fermentation, the wine is transferred to oak.
Ageing
Total ageing lasts 62 months, including at least 18 months in 25 or 50 hL French oak casks.
Technical data
Alcohol: 14% vol.
Tasting profile
Intense garnet in colour with orange nuances. The elegant nose combines violet, small red fruits and leather. The palate is structured and harmonious, with persistent yet soft tannins.
Serving and pairing
Serve at 18–20°C. Pair with pasta dressed with mushroom or cheese sauces, Alba white truffle, red-meat or game stews and pot roasts, and mature cheeses. The wine is suited to lengthy cellar ageing.
