About this wine
Vineyard and terroir
The Müller-Thurgau comes from the Hofstatt single vineyard at Favogna di Sotto near Magrè sulla Strada del Vino. The exposed high-plateau site lies at 1,000 m and faces south. Its 3 ha of vines are trained to Guyot at densities of up to 8,500 vines/ha and were planted from 1990 onward. Red silty-loamy sand dominates the middle horizons of the heterogeneous glacial-moraine soil, interspersed with white and red marble, porphyry and granite fragments. Dolomite and limestone occur deeper down, while the soil's high salt content contributes to the wine's fruit and herbal character.
Grapes
100% Müller-Thurgau.
Vinification
The exposed site and its weather require two to four harvesting passes and strict selection for optimum ripeness. Following short skin contact, the grapes are gently pressed. Half of the must ferments in a large wooden barrel and half in stainless steel, without added yeast.
Ageing
The young wine rests on its fine lees for just under one year and then matures for another six months in bottle. Bottles are sealed with a screw cap to preserve the aromatic spectrum. The Ad Tempus collection consists of mature cellar-held releases, issued after extended bottle maturation and marked with a distinctive seal.
Technical data
2015: 13.5% vol alcohol, 6.7 g/l acidity and 3.6 g/l residual sugar. Production was 11,000 bottles. The technical sheet gives a yield of 35–40 hl/ha. Ageing potential is at least ten years.
Tasting profile
Light straw yellow with green reflections. The nose is intensely aromatic, combining white flowers and yellow fruit with peach and apricot; mineral notes become more prominent with age. The palate is delicate, harmonious and succulent, with fresh acidity and a persistent finish.
Serving and pairing
Serve at 10–12 °C with starters, fish, seafood, Asian dishes, poultry or pork.
