About this wine
Vineyard and terroir
The late-harvest Müller-Thurgau comes from the Hofstatt single vineyard at Favogna di Sotto, Magrè. This exposed, south-facing high-plateau site stands at 1,000 m. The Guyot-trained vines were planted from 1990 onward at densities of up to 8,500 vines/ha. Red silty-loamy sand and heterogeneous glacial moraine contain white and red marble, porphyry and granite fragments, with dolomite and limestone in the deeper horizons. High salt levels contribute to fruit and herbal aromas.
Grapes
100% Müller-Thurgau.
Vinification
Autumn morning dew and high humidity at the elevated site create conditions for noble rot, Botrytis cinerea, which naturally concentrates the juice. The grapes are harvested from mid- to late December, before Christmas, and gently pressed. Fermentation proceeds in a small stainless-steel tank over six months on the fine lees.
Ageing
Following bottling, the wine matures for another five years in the cellar.
Technical data
2016: 9.5% vol alcohol, 7.8 g/l acidity and 101.9 g/l residual sugar in the technical sheet. Yield was 30 hl/ha and production amounted to 1,200 bottles. Ageing potential is at least ten years.
Tasting profile
A full-bodied late-harvest wine with depth, density and persistence, balanced by lively freshness. Minerality and structure support both drinkability and ageing. Lime and honey return on the finish, leaving the palate refreshed.
Serving and pairing
Serve at 10–12 °C. Pair with fish starters, Mediterranean main courses, oysters, clams, crab, sushi or Asian cuisine.
