About this wine
Vineyard and terroir
The 0.6-hectare Toren vineyard lies in Niclara, part of Cortaccia sulla Strada del Vino, at 270–320 metres above sea level and has a southern exposure. The vines were planted from 1987 onward and are trained using Guyot and cordon systems at a density of 9,000 vines per hectare. Yield is restricted to 25–30 hectolitres per hectare.
The sandy soil contains a substantial clay component and abundant limestone gravel. Its sand warms rapidly and then releases the accumulated daytime heat to the vines during the night. Deep-reaching roots maintain a steady nutrient supply. These conditions support even ripening and contribute precision, elegance and pronounced berry aromas.
Grapes
100% Cabernet Sauvignon.
Vinification
The grapes are carefully destemmed and selected to eliminate green material. Fermentation proceeds with three weeks of maceration for extraction. Malolactic fermentation occurs during the subsequent year in barrique.
Ageing
The wine matures for one year in barrique and another six months in tank. Following bottling, it rests for a further two years before release.
