About this wine
Vineyard and terroir
The fruit comes from the Cantine San Giorgio vineyards in the province of Taranto, where southern sun and sea breeze help the grapes reach ideal ripeness. The Primitivo is native to the area.
Vinification
The grapes are harvested by hand in the first half of September. After destemming, they undergo gentle maceration and fermentation at a controlled temperature, followed by soft pressing.
Ageing
The wine ages for 6–12 months in French and American oak barrels and tonneaux.
Tasting profile
Deep aromas of ripe berries, spices and a touch of sweet vanilla. The texture is velvety, and the character smooth and well rounded. It shows the full character and rich aromas of Primitivo.
Serving and pairing
Serve at 16–18 °C and allow the wine time to open gradually. Suggested dishes are grilled meat, braised game, pasta with tomato-based sauces and aged cheeses.
Label / history
Cantine San Giorgio is a range of wines named after great thinkers and philosophers. Diodoro refers to Diodorus Siculus (Diodorus of Sicily), an ancient Greek historian who wrote a monumental work of history. He spent 30 years writing his Library and made numerous journeys through Europe and Asia in that time.
