About this wine

Vineyard and terroir

The grapes grow on white, rocky limestone soils dating from the Kimmeridgian period, warmed by the sun on Puglia’s Gargano Peninsula.

Vinification

Spontaneous fermentation takes place in open stainless-steel tanks without temperature control, with four days of skin contact. The wine is bottled unfiltered.

Ageing

The wine rests in large demijohns for six months.

Tasting profile

Elegant and very easy-drinking, with the masculine, upright, fresh and mineral character associated with the Calcarius collection.

Label / history

Valentina created Calcarius to explore the meeting of art and science. Its guiding ideas are rationality, exploration, minerals and limestone.
