About this wine
Vineyard and terroir
The grapes grow on distinctive white, stony limestone soils dating from the Kimmeridgian period, warmed by the sun of Puglia’s Gargano Peninsula.
Vinification
The grapes are harvested by hand and pressed directly. Spontaneous fermentation takes place for 5–6 days in open steel tanks without temperature control.
Ageing
The wine rests for six months in large steel vats before being bottled without filtration.
Tasting profile
Structured and focused, with a fresh, mineral character.

Valentina conceived the Calcarius collection as an exploration of the meeting point between art and science, centred on rationality, research, minerals and limestone.
