About this wine
Vineyard and terroir
The grapes grow on distinctive white, rocky limestone soils dating from the Kimmeridgian period, warmed by the sun of the Gargano Peninsula in Puglia.
Vinification
Made by the ancient pét-nat method, the must is bottled midway through fermentation and the bottles are sealed with caps. Fermentation continues in the bottle, retaining carbon dioxide and yeast in the wine. No sulfites are added, as the integrated carbon dioxide keeps the wine stable. The wine is not disgorged.
Tasting profile
Cloudy in appearance, with a masculine, linear, fresh and mineral character. The retained yeast contributes a broad range of flavours.
