About this wine
Vineyard and terroir
The fruit comes from distinctive white, rocky limestone soils dating to the Kimmeridgian period on Puglia’s Gargano Peninsula, where the vineyards are warmed by the sun.
Vinification
Spontaneous fermentation takes place in stainless-steel tanks without temperature control. The wine undergoes two days of carbonic maceration with the skins and stems, followed by gentle pressing and separation of the pomace from the juice.
Ageing
After alcoholic fermentation, the wine rests for six months in large stainless-steel tanks. It is bottled without filtration.
Tasting profile
Lively and easy-drinking, with a masculine, vertical character marked by freshness and minerality.
Label / history
The Calcarius collection was conceived by Valentina to explore the meeting point between art and science. Its guiding ideas are rationality, research, minerals and limestone.
