Vineyard and terroir
The grapes grow on low-yielding vines on the eastern slope of the Ruttars estate. The soil has a relatively high limestone content, which contributes finesse.
Vinification
The fruit has very high acidity, allowing a short cold skin maceration while retaining its acidic backbone. After gentle pressing, the must ferments in small oak barrels, most of them previously used.
Ageing
The wine rests for 9–10 months. The finest barrels are then selected and blended before bottling; this separate bottling is produced only from the best vintages.
Tasting profile
The aroma is distinctive and unmistakable, with an especially intense Friuli Sauvignon character. The wine combines finesse with a firm acidic backbone.
