Vineyard and terroir
The fruit is hand-picked from a one-hectare vineyard on a southwest-facing hillside in San Giorgio a Brazzano. The vines were planted in 1970.
Vinification
After harvest, the grapes are destemmed and pressed. The must undergoes a short cold maceration, followed by fermentation and several weeks of post-fermentation maceration in 12 hl oak vats filled only halfway.
Ageing
The wine matures for two to three years in new French oak barrels.
Label / history
The wine is made in small quantities and only in the best vintages. Its name comes from centa, an ancient term for a type of fortification; remains of one were found near the vineyards in Collio.
