Grapes

100% Barbera.

Vinification

The grapes undergo 20 days of skin maceration at controlled temperature.

Ageing

The wine matures for 15 months in oak carati and then rests for one year in bottle.

Tasting profile

Very deep ruby red with garnet reflections. The broad, rich and complex bouquet combines abundant fruit with underlying vanilla, liquorice and cocoa. The palate is full, powerful and highly structured, yet elegant, harmonious and sensual, with a very persistent finish.

Serving and pairing

Serve at 18°C. Pair with substantial meat dishes, roasts—including preparations with sauces—and mature cheeses. The technical sheet gives formats of 0.375 L, 0.75 L, 1.5 L and 3 L.

Label / history

On 16 October 1989, against the advice of those around him, Giacomo Bologna harvested Barbera late. On tasting the resulting wine, he exclaimed “Ai Suma”—“we’ve made it” or “here we are.” That harvest established the wine, which has been produced only in the best years since 1989.
