Vineyard and terroir
The late-harvested Chardonnay comes from Tenuta Serra dei Fiori in the municipality of Trezzo Tinella.
Grapes
100% Chardonnay. Asso represents the highest card in the estate’s range. Only the finest fraction of must from delicate pressing—the “flower of the must”—is used.
Vinification
After delicate pressing, the must is clarified and settled before fermentation in oak casks.
Ageing
The wine ferments and matures in oak casks for eight months, followed by a further eight months in bottle.
Tasting profile
Broad and enveloping, with pronounced fruit and vanilla aromas accompanied by a pleasant smoky suggestion. The palate is sumptuous and satisfying, balancing ripe fruit with oak-derived notes.
Serving and pairing
Serve at 10–12°C. Pair with antipasti, fish dishes, white meats and fried preparations.
