Vineyard and terroir
The grapes come from 25 estate plots across Franciacorta, in the province of Brescia. The vines are more than 30 years old on average. The area has a distinctive microclimate, and the vineyards have a higher planting density than is traditional locally. Green harvesting and a gradual reduction in the use of inorganic fertilizers are employed to improve grape quality.
Vinification
The grapes are harvested in the final third of August. Each variety is fermented separately at a strictly controlled temperature, using both stainless-steel tanks and small oak barriques. The wine then undergoes eight months of débourbage, during which the must clarifies by settling. After blending, secondary fermentation takes place in the bottle by the traditional Champagne method.
Ageing
Following secondary fermentation, the wine rests on its lees for more than four years in cellars maintained at no more than 12 °C.
Label / history
Ca' del Bosco began operating in 1968. Its history dates to 1965, when Annamaria Clementi Zanella moved to Franciacorta and settled in a large house in the woods. Her son, Maurizio Zanella, later played an important role in the estate's development.
