Vineyard and terroir

The fruit comes from low-yielding vineyards in Sambuca di Sicilia, in the province of Agrigento. Yields are 70 q/ha. Strong sunlight and warm winds arriving from Africa encourage aromatic and flavorful berries.

Grapes

A blend of Nerello Mascalese and Nero d’Avola.

Vinification

The Nerello Mascalese canes are cut so the grapes can wither naturally under the hot Sicilian sun and African wind. After 15–20 days, when the berries have lost approximately 15–20% of their weight, they are pressed and fermented on the skins. The technical sheet specifies a 12–15-day maceration at 24–26°C, with four pump-overs per day, one délestage and two additional days of pump-over after alcoholic fermentation.

Ageing

Published specifications differ: the wine description gives approximately six months in French and American oak barrels, while the technical sheet specifies 12–16 months in French oak.

Yield: 70 q/ha. Winemakers: Vito Giovinco and Giovanni di Giovanna.

Tasting profile

Bright, vivid and intense ruby red. The complex bouquet combines red fruit, spices and red flowers. The palate is warm, full, soft and balanced, with a red-fruit aftertaste and a harmonious expression of the two varieties.

Serving and pairing

Serve at 18°C. Pair with anchovies, goat’s cheese, grilled meat and vegetables, substantial first courses, or richly flavored fish baked in the oven.
