Vineyard and terroir

The Nebbiolo comes from a 1.2 ha vineyard surrounding the winery at 260–290 m above sea level. The site faces south and southwest, with clay and alluvial soils containing a small proportion of sand. The first vines were planted in 1970, after the land had been deliberately left uncultivated for 30 years.

Vinification

The grapes are harvested by hand and macerated for 10–15 days. Fermentation takes place in stainless-steel tanks at a maximum of 28–29 °C, followed by malolactic fermentation.

Ageing

The wine matures for at least two years in small 300 L French barrels.

Vintage notes

In 2016, Barbaresco experienced a classic growing season without unusual weather. The grapes ripened evenly, reaching ideal quality at the customary time for the area. The bunches were thinned at the end of August, concentrating the vines’ energy into fewer bunches during the final 40 days and increasing aromatic concentration.

Label / history

Asili, founded in 1973, was one of the Ceretto family’s first estates. It follows the château model: the winery stands at the centre of a small property and works exclusively with grapes from the surrounding vineyard.
