Vineyard and terroir
The fruit comes exclusively from grapes dried on the vine in the Stracacio vineyard in Contrada Spescia, Cupramontana, beside the Gaiospino vineyard. The site lies at 250 m above sea level, faces west and has predominantly calcareous-marl soil. The vineyard was planted in 2005.
Spontaneous ground cover is maintained and no fertiliser is used. The vines are pruned manually to single and double Guyot; the area beneath the rows is managed through both manual and mechanical work.
Grapes
Verdicchio; the percentage is not specified. Bambule' is made only in selected vintages from grapes allowed to dry naturally on the vine.
Vinification
The cane is not cut during the natural on-vine drying period. Harvest generally takes place from the middle to the end of October. Because yields are very low, the grapes are destemmed and gently crushed. Spontaneous fermentation begins in contact with the skins, after which vinification is completed in French oak barriques.
Ageing
The wine matures for five years in barriques, followed by two months in bottle.

Tasting profile
The nose combines wild honey, beeswax, barley sugar, quince paste, dried mushrooms and moss. These impressions return on the palate, leading into a finish marked by almonds, Calvados, caramel and liquorice root. The style is enveloping, with an oxidative profile shaped by drying the fruit on the vine, yet it remains ethereal, elegant and never cloying.
Serving and pairing
Suitable at the end of a meal with dry almond, hazelnut or chocolate biscuits and pastries. It also pairs with aged and blue cheeses and can be served by itself as a concluding glass.

Bambule' is conceived as an artistic expression of the vineyard and is produced only in selected years, using the approach considered most appropriate for each release.
