Vineyard and terroir

The fruit comes from the central part of the vineyard in Contrada Coroncino, Staffolo, at 250 m with a south-eastern exposure. The soil is clay and the vines were planted in 2017. The vineyard receives no fertiliser and the soil is not cultivated. Spontaneous ground cover is cut approximately twice per year, while under-row work and both single- and double-Guyot pruning are carried out manually.

Grapes

Verdicchio. The exact percentage is not specified.

Vinification

In 2019, noble rot developed on the grapes between late September and early October. Preserving this character required extensive manual cleaning of the bunches and resulted in very low must yields. The grapes were softly pressed and the must underwent static settling, followed by spontaneous fermentation in a cocciopesto amphora. The wine was not blended with any other lot.

Ageing

The wine remained on its fine lees for 24 months in cocciopesto amphora—the “Terra” phase—then spent another 24 months in French-oak tonneaux—the “Aria” phase—and 24 months in bottle.

Technical data

Format: 750 ml. Ageing potential: 3 years.

Tasting profile

The nose is elegant and austere, opening with distinct sweet spices before moving through preserved fruit and honey to creamy pastry notes and a balsamic finish. The palate is powerful and enveloping, with liquorice root, candied citron, honey and preserved fruit framed by delicate tannins. The finish is firm and unexpectedly savoury. Although the aromas suggest sweetness, the palate is dry, vigorous and elegant, with considerable aromatic layering.

Serving and pairing

Suitable as a meditation wine or with very mature blue cheeses, foie gras and richly flavoured, fatty dishes.

Vintage notes

The wine is the final chapter in a trilogy devoted to the 2019 vintage. Its defining feature is the combination of noble-rot fruit, a dry palate, cocciopesto fermentation and extended ageing in amphora, French oak and bottle.
