Vineyard and terroir
The fruit comes from the Vigneto di Spescia in Cupramontana, on the hillside opposite the cellar. The steep, north-west-facing site stands at 350 m a.s.l. Its calcareous marl, once quarried for gypsum, combines calcium carbonate and clay, producing soil that is cohesive but also friable.
The vineyard comprises 2 ha planted in 1975 and 1 ha planted in 1991. The soil has not been tilled since 1988. Spontaneous grass cover is maintained, the area beneath the rows is managed manually, and the vines are manually pruned to single and double Guyot.
Grapes
Verdicchio from a single vineyard. Gaiospino Fume' shares its vineyard origin with Gaiospino but follows a substantially longer, exclusively oak-based cellar path.
Vinification
The grapes undergo soft pressing followed by static settling of the must. Fermentation starts spontaneously with indigenous yeasts in French-oak tonneaux; both new and previously used vessels may be employed.
Ageing
The wine matures exclusively in tonneaux for at least 24 months on its fine lees, without racking, before bottling. A final organoleptic selection is made before the wine goes into bottle.
Tasting profile
The layered, vigorous nose combines intense yellow fruit, candied citrus and yellow flowers. Longer aeration reveals butter, honey and vanilla from the extended tonneaux maturation, followed by the characteristic refined smoky note evoked by the name “Fume’.”
The palate is broad, warm and enveloping, supported by pronounced acidity and firm savouriness. The finish is persistent and clean, with toasted notes returning at the end. Structure, power and savoury intensity are held in balance.
Serving and pairing
Pair with Northern European dishes, fatty fish, mature or blue cheeses and rich truffle-based preparations. It can also be served alone at the end of an evening. The expected ageing potential is at least 10 years. Available formats are 0.75 L and 1.5 L.
