Soave Superiore
1 cantina. East of Verona, where the Lessini mountains sink into the Po plain, twelve communes around Soave and Monteforte d'Alpone grow Garganega on hills of decomposed basalt. The soils are dark clay loams, neutral or barely alkaline, that drain well but store water through the year and release it slowly to the roots; the rules credit their minerals with the fullness and savour that Soave Superiore develops with age. Vineyards lie between 35 and 380 metres, facing east, south and west, in a mild climate with 700 to 1,000 mm of rain in spring and autumn. Continua a leggere ↓

Soave Superiore in breve
The wine must be at least 70 per cent Garganega, with Trebbiano di Soave and Chardonnay making up the rest. It is meant to be a substantial white, left on its lees for months before bottling to gain depth and structure; there is also a Riserva, and the historic heart of the zone may be labelled Classico.
In Roman times Soave was a pagus, a rural wine district. The Verona pergola, still the local way of training vines, is documented from 680, and a stone inscription of 1375 on the town's Palazzo di Giustizia bears witness to its medieval wine trade. In 1924 Soave won one of the first legal protections for a typical wine and founded a consortium. It became a DOC in 1968; the Superiore became a DOCG in 2001.
