Vineyard and terroir

The fruit comes from vineyards around Vicenza in the Colli Berici area. The landscape was shaped by an ancient sea, leaving fossil shell deposits, while the soils are predominantly basaltic and volcanic and are also associated with white limestone.

Grapes

Sauvignon Blanc.

Technical data

Alcohol: 12% vol. The wine is bottled in a 750 ml Bordeaux bottle weighing 380 g. Recommended serving temperature is 8–12°C, with an ageing potential of 1–3 years.

Tasting profile

Bright and energetic in appearance, with yellow and green reflections. Lemon, lime peel, acacia blossom and sage define the aromatic profile. The palate combines freshness with the mineral and savoury character of the Colli Berici, leading to a persistent, citrus-driven and refreshing finish with light saline touches.

Serving and pairing

Serve at 8–12°C. Suitable for vegetarian recipes and dishes based on fish, crustaceans or molluscs. Suggested pairings include pasta with clams and rocket, baked sea bream, cod with tomatoes and olives, pasta alla puttanesca, swordfish carpaccio with apple and ponzu, pasta with courgettes and prawns, courgettes alla scapece, and sashimi of tuna, salmon and prawns.

Label / history

Casa Defrà takes its name from Casa dei Fratelli Cielo, the family’s original farmhouse at the foot of the Colli Vicentini. The family established itself there in 1908 and planted its first vineyard; the project now spans four generations.
