The organically cultivated vineyards lie in the valleys of Negrar and Fumane, within Valpolicella Classica.

Corvina, Corvinone and Rondinella.
Vinification
Selected grapes are traditionally laid on rush mats for appassimento. Fermentation takes place in January after the drying period.
Tasting profile
Dense, compact garnet red. The nose is intense and persistent, combining ethereal and fruity aromas of sour cherries in alcohol and prunes with dried flowers and a broad range of sweet spices. The palate is structured and notably soft, balanced by velvety tannins.
Serving and pairing
Serve at 18–19 °C. Pair with char-grilled red meat, braised meats, feathered game and mature cheeses.
