Vinification
The grapes are harvested at optimal ripeness. At the winery, the fruit is decanted, then undergoes skin maceration and fermentation in temperature-controlled stainless-steel tanks. Malolactic fermentation begins after alcoholic fermentation is complete.

Pair with red meat dishes, particularly beef and pork, as well as pasta, game and cheeses.
