Vineyard and terroir
The fruit comes from vineyards on the Colli Orientali hills in the municipality of Tarcento. The vines grow at 400 m above sea level on terraces across gently sloping hills, in marl soils dating from the Eocene epoch. They are planted at a density of 4,200 vines per hectare and trained using the Guyot system.
Friuli-Venezia Giulia combines coastal plains, mountains and plateaus. The Alps protect the area from harsh cold winds, while the Adriatic Sea moderates summer heat and abrupt winter temperature changes. Sea breezes move north towards the hills at dawn and return south towards the coast in the evening, limiting fungal diseases and helping to keep the vines healthy. Rainfall is generally heavy but brief, and the climate is bright and sunny, supporting the ripening of juicy, aromatic fruit.
Vinification
The grapes are harvested at full ripeness in late September. After pressing, they undergo 18 hours of cold maceration. The rich, dense must then ferments slowly in stainless-steel tanks at a controlled temperature no higher than 17 °C. After fermentation, the wine is racked and kept on its fine lees until spring, with regular bâtonnage.
Ageing
After its time on the fine lees, the wine is bottled and stored horizontally in the cellar for six months.
Tasting profile
Regular bâtonnage gives the wine a rounded character and a refined, smooth texture.
