Vineyard and terroir
Selected Nero d’Avola comes from Feudi del Pisciotto vineyards in Niscemi, in the province of Caltanissetta, at 100 m above sea level. The loose soils carry spurred-cordon vines planted at 6,000 plants per hectare. Yield is 60 quintals per hectare, and harvest falls in the last week of September.

100% Nero d’Avola.
Vinification
The base wine is made in temperature-controlled stainless steel. Its sparkle is produced by the Charmat method. Malolactic fermentation is described differently in the available technical information: partially completed on the wine page and completed in the technical sheet.
Ageing
Maturation takes place in stainless steel, followed by three months in bottle.

Sicilia DOC. Brut. Available format: 0.75 L.
Tasting profile
Brilliant, pale coral pink with a fine, persistent perlage. The bouquet is intense yet delicate, with rose and citrus notes. Harmonious, fruity and savoury on the palate, it closes with a fresh, long and clean finish.
Serving and pairing
Its freshness and persistence allow it to accompany an entire meal, especially fish dishes.
