Vineyard and terroir
The vineyards are situated at 100 m a.s.l. on loose soil. The vines are trained to spurred cordon, planted at 6,000 plants per hectare and cropped at 60 q/ha.
Grapes
Grillo, an indigenous white variety valued for aromatic expression and freshness.
Vinification
Harvest occurs in mid-September. Vinification takes place in temperature-controlled steel tanks, with malolactic fermentation completed.
Ageing
The wine matures for eight months in barriques, split evenly between new and second-use barrels, and then for eight months in bottle.
Tasting profile
Straw yellow, with abundant apple and pear aromas. The palate is warm and dry, slightly tannic and marked by a citrus note. The introductory profile also describes the colour as golden yellow.
Serving and pairing
Pair with medium-aged cheeses or substantial fish such as tuna and swordfish.
