Vineyard and terroir
The grapes grow on the north-eastern side of Mount Etna, at 500–600 metres above sea level.
Vinification
The grapes are harvested by hand from mid-October through the final ten days of the month. Fermentation lasts 14 days at 26–27 °C.
Ageing
The wine matures in oak barrels for six months, followed by two months in bottle in Firriato’s cellars before release.
Tasting profile
Deep ruby in colour, the wine is elegant.
Serving and pairing
Serve in glasses with a slightly rounded bowl that is not too wide.

Annual production is 60,000 bottles.
