Vineyard and terroir
The vineyards are located near Castiglione di Sicilia, on the north-eastern slope of Mount Etna, at 500–600 metres above sea level. The vines grow in well-drained sandy soils over a volcanic base. Planting density is 4,000–5,000 vines per hectare, with yields of 7.5–7.7 tonnes per hectare.
Grapes
The blend comprises 80% Nerello Mascalese and 20% Nerello Cappuccio.
Vinification
The grapes are harvested by hand during the middle and final ten-day periods of October. Alcoholic fermentation takes place in stainless-steel tanks for 14 days at a controlled temperature of 26–27 °C, followed by malolactic fermentation.
Ageing
The wine matures in oak barrels for six months and then rests in bottle for a further two months.
